Valmar COMBISYSTEM is a patented batch freezing technology designed to deliver consistent texture, controlled overrun, and superior gelato structure. Installed across Valmar’s TTi series batch freezers, the system automatically adapts to different recipes, production volumes, and processing conditions to optimize the gelato freezing cycle.

By precisely controlling air incorporation, freezing speed, and product consistency, COMBISYSTEM produces gelato with a smooth, creamy structure and improved resistance to melting. Even at output temperatures as low as -12°C, the gelato remains soft, stable, and easy to work with using a spatula, with controlled overrun of up to 40% of mix weight.

This performance is achieved through a combination of integrated engineering features that work together to optimize the entire batch freezing process.
